The toughest bit is cutting the squash - they are so tough to cut, or maybe I need new knives.
This made enough for three....
1 butternut squash
1 carton or tin of tomatoes
spinach lasagne sheets
1 block of feta cheese (I used about three quarters of the pack)
fresh basil leaves
parmesan
salt
pepper
olive oil
First I cut the squash into cubes, drizzled with olive oil and roasted in the oven for about 40 mins on a high heat or until nearly soft all the way through and slightly golden.
While that was cooking, I started layering the lasagne in an overproof dish.....first some tomato on the bottom of the dish, then a layer of lasagne sheets then some crumbled feta.
Repeat this layer another twice adding some torn fresh basil leaves into one of the layers and some seasoning, then top with the squash.
Grate some parmesan over the top and drizzle with olive oil. Bake at 180 until golden, about another 30-40 mins.
